cherry shortbread

Ingredients:

3 cups self raising flour

220g Nuttelex or other vegan margarine

1 cup icing sugar

I packet of red glacé cherries

 

Method:

Melt margarine

Sift flour and icing together and mix well with margarine

Knead the dough for about a minute, adding more flour if the mixture is too sticky

Roll into small balls and press onto an oven tray lined with baking paper

Place one cherry on top of each biscuit

Bake in oven for 15-20 minutes or until golden

 

Makes about 20
