chia choc chilli mousse

Ingredients:

1 cup chia seeds

4 cups (1L) brown rice milk, soy milk, coconut milk, coconut water (paleo)

3 tbsp cacao powder

1 tbsp agave syrup; maple syrup or molasses (paleo)

1 tsp cayenne pepper (½ tsp if you don't like too hot)

 

Method:

Combine chia, cacao, agave and cayenne together and ensure there are no cacao lumps.

Add 1 cup of milk and stir vigorously with a small whisk until all the mixture is very well combined.

Add another cup of milk and stir extremely well again.

Repeat for the remaining milk.

Set aside for 30 minutes to set - the chia seeds will become gelatinous.

Blend the ingredients in a food processor, place into small glasses and place in the fridge to set.

 

Serve chilled with seasonal fruit, coconut cream, coconut yoghurt or coconut ice cream.

 

Serves 4-6 people
