double choc cake

Ingredients:

2½ cups wholemeal self-raising flour

½ cup cocoa

1 cup raw caster sugar

½ cup tahini

250g copha, melted

350ml water

250g dark chocolate chips

1 375g block vegan dark cooking chocolate

250g King Land soy cream cheese

100's and 1000's for decoration

 

Method:

Sift flour and cocoa together in mixing bowl.

Add sugar, melted copha, water and tahini. Beat until well mixed.

Add chocolate chips, fold through and mix thoroughly.

Pour mixture into large baking dish, into cupcake papers or two cake tins.

Bake in fairly hot oven (190°C / 375°F) for approximately 40 minutes.

 

Let cool for about 10 minutes and tip onto wire racks.

Melt cooking chocolate and mix in soy cream cheese thoroughly.

Pour over the cake, or cupcakes and smooth out.

If making the two cakes, sandwich them together with half of the icing.

 

Decorate with 100's and 1000's

Serve warm with vegan ice-cream
