Sarasvati Spinach Stack

INGREDIENTS:

1 bunch of spinach

1/4 pumpkin, sliced

1 eggplant (aubergine), sliced

2 red capsicums (peppers), sliced

2 zucchinis (courgette), sliced lengthways

1 tin of Sanitarium Casserole Mince

250g King Land soy cream cheese

2 tablespoons plain flour

4 garlic cloves, crushed

1/4 cup soy margarine

 

METHOD:

arrange eggplant in a colander and sprinkle with sea salt, cover with a

paper towel and weight, leave for 30 minutes

melt soy margarine and soy cream cheese together, add flour and garlic,

mix well

cook spinach leaves and vegetables

grease baking dish

lay leaves of spinach on base of baking dish, with the leaves extending

up the sides of the dish

layer pumpkin, zucchini, casserole mince, eggplant, capsicum

pour cheese mixture on top

finish with layer of spinach, seal edges

cook in moderate oven (180°C / 350°F) for about 40 minutes

 

Serves: 4 people

serve with salad
