Ingredients
1 cauliflower, steamed or cooked
1 cup nutritional yeast
1 zucchini, grated
2 carrot, grated
2 tomatoes, diced
400g cooked lentils
6 Mushrooms, diced
Oregano
Basil
Black Pepper
Coconut oil
Method
Turn the oven on to 180C (356F)
Cook vegetables and lentils with herbs in wok with coconut oil
Simmer until mostly cooked
Cool cauliflower
Blend in high-speed blender (I used Multi Use on High with Blendec) with nutritional yeast - set aside
Grease ramekin bowls
Place vegetable and lentil mix in 6 ramekin bowls - up to 2/3rds
Top with cauliflower mixture
Sprinkle with nutritional yeast
Heat in 180C oven for 20-30 mins - with a little bit of brown on top
Serve with greens e.g. lettuce, nasturtium leaves, spinach
Can also serve with a green salad or corn chips
